Sesame Tofu Rice Squares with a Tangy Tofu Mix

Ingredients

  • Sushi rice
  • Water
  • 5 tbsp rice vinegar
  • 1.5 tbsp sugar
  • 1 tsp salt
  • Tofu
  • Cucumber
  • Toasted sesame seeds
  • Sesame oil
  • Soy sauce
  • Sriracha
  • Salt
  • Pepper
  • Mayonnaise
  • Corn starch
  • Sesame seeds
  • Cooking oil

Preparation

  1. Cook sushi rice according to package and serving size recommendations.

  2. Mix 5 tbsp rice vinegar, 1.5 tbsp sugar, and 1 tsp salt in a pan. Heat gently without boiling.

  3. Pour the rice vinegar mix over cooked rice and press it into a small baking form. Compact it tightly.

  4. Chill the rice in the fridge or freezer until completely cooled.

  5. Mix tofu, cucumber, toasted sesame seeds, sesame oil, soy sauce, sriracha, salt, pepper, and mayonnaise in a bowl. Adjust flavors and refrigerate.

  6. Once the rice is fully chilled, cut it into squares.

  7. Heat oil in a frying pan. Coat rice squares with corn starch and sesame seeds. Fry until golden brown on both sides.

  8. Place fried rice squares on paper to remove excess oil. Top with the tofu mix.
