Superfood Sushi with Pink Rice
Ingredients
Pink rice
- 250g sushi rice
- 3 Tbsp rice vinegar
- 1 Tbsp maple syrup
- 1 tsp salt
- 1 tsp pink unicornsuperfoods pitaya powder
Filling
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp mirin
- 1 tsp garlic powder
- 300g oyster mushrooms
- 1 carrot
- 1 cucumber
- 1 avocado
- purple cabbage
- 6 nori sheets
- black sesame seeds
Preparation
Prepare the sushi rice according to instructions on the package.
Add the rice vinegar, maple syrup, salt and pitaya powder to the rice and combine well. Set aside to cool.
In a bowl, whisk together the soy sauce, sesame oil, mirin, and garlic powder to make the marinade. Add the oyster mushrooms and coat them evenly.
Heat a saucepan over medium heat, add the mushrooms, and fry for 5-8 minutes until dark brown and chewy.
Prepare the vegetables: julienne the carrot and cucumber, slice the avocado and purple cabbage
Assemble the sushi rolls: place a nori sheet on a bamboo mat, spread 3-5 tablespoons of rice evenly, add the fillings, roll tightly, and seal the roll
Repeat the assembly with remaining ingredients. Use a sharp knife to cut the rolls into pieces and serve with soy sauce.
