Luxury Mixed Nut Cake

Ingredients

Nut mixture

  • 6 tablespoons melted butter
  • 3/4 cup light brown sugar
  • 1/4 cup honey
  • 1 cup sliced almonds
  • 1/4 cup pine nuts

Cake mixture

  • 1/2 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup ground almonds
  • 1/2 cup soft butter
  • 1/2 cup fine granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Preparation

  1. Position the rack in the middle of the oven and preheat the oven to 180°C.

  2. Prepare a 10-inch round cake pan.

  3. For the nut mixture: Spread the butter in the bottom of the pan and gently swirl to coat the sides.

  4. Sprinkle the brown sugar in the pan.

  5. Spread the honey over the sugar.

  6. Spread the almonds and pine nuts over the sugar.

  7. For the cake mixture: Sift the flour, baking soda, and salt on parchment paper or in a deep bowl, add the ground almonds, and set aside.

  8. In the mixer bowl, place the butter and sugar, attach the paddle attachment, and mix on medium speed for 3 minutes until light and creamy.

  9. Add the eggs and vanilla, and mix on medium speed until incorporated.

  10. Add the flour mixture and buttermilk, and mix on medium speed for one minute.

  11. Pour the cake batter over the nut mixture in the pan.

  12. Bake for 40 minutes and test doneness with a wooden skewer; it should come out clean.

  13. Remove from the oven and immediately invert onto a serving plate.

  14. Leave the pan on the cake for 5 minutes, then remove it.

  15. Allow the cake to cool completely before serving.
