No-Bake Snickers Superfood Cake

Ingredients

Nut base

  • 15g cocoa powder
  • 40g almond flour
  • 20g coconut flour
  • 10g coconut blossom sugar
  • 10g coconut oil
  • 20g dark chocolate
  • 2 tablespoons coconut milk

Date caramel

  • 100g dates (pitted)
  • 30g peanut butter
  • 1/2 teaspoon Himalayan salt

Cashew cream

  • 150g soaked cashews
  • 1 banana
  • 2 tablespoons coconut milk
  • 1 teaspoon lucuma powder
  • 1 teaspoon maca powder

Chocolate coating

  • 50g dark chocolate

Preparation

  1. For the nut base, mix all ingredients in a bowl to a crumbly mass and press the base into a form.

  2. For the date caramel, blend the dates with the peanut butter until a sticky mass forms, stopping and stirring the blender occasionally to prevent overheating, then add it as the second layer to the form.

  3. For the cashew cream, finely blend all ingredients with an immersion blender and add it as the third layer over the cake.

  4. Melt the chocolate and add it as the fourth layer over the cake.
