No-Bake Peanut Butter Cheesecake

Ingredients

Base

  • 6 Oreos
  • 2 tablespoons coconut oil

Filling

  • 175g cream cheese
  • 3 tablespoons Whole Earth peanut butter creamy
  • 50 ml coconut milk
  • 2 tablespoons erythritol or xylitol
  • 50g unsalted peanuts

Topping

  • 1 tablespoon peanut butter
  • 1 tablespoon melted dark chocolate
  • 1 tablespoon peanuts

Preparation

  1. Crumble the Oreos finely and mix with the liquid coconut oil. Press the mixture into a small 14cm springform pan and chill.

  2. Mix all the filling ingredients together and pour them over the base in the pan. Place in the freezer for 2 hours.

  3. Remove the cake from the springform pan. Decorate with peanut butter, melted dark chocolate, and peanuts, then store in the refrigerator.
