Brazilian Strawberry Truffles with White Brigadeiro Filling

Ingredients

  • 25 strawberries
  • 1 can sweetened condensed milk
  • 1 tablespoon (level) margarine
  • margarine for greasing hands
  • 400 g milk chocolate coating

Preparation

  1. Start by placing the whole strawberries in a bowl of water to freshen them, without removing the stems

  2. Meanwhile, prepare the white brigadeiro by combining sweetened condensed milk and margarine in a microwave-safe bowl. Microwave on high for 6 minutes, stirring every 2 minutes, until thickened. Alternatively, cook in a saucepan over medium heat, stirring constantly, until the mixture pulls away from the bottom of the pan

  3. Transfer the brigadeiro to a small dish and let cool completely at room temperature. Do not refrigerate as it may become too hard

  4. Remove the stems from the strawberries and let them dry on a paper towel. Reserve the stems separately

  5. Grease your hands with margarine and take a portion of the cooled brigadeiro

  6. Flatten the brigadeiro portion and place a dry strawberry in the center

  7. Gently wrap the brigadeiro around the strawberry, sealing it completely so the fruit is not visible

  8. Place the wrapped strawberry on a margarine-greased dish. Repeat with the remaining strawberries

  9. Refrigerate the strawberries until firm

  10. Melt the milk chocolate coating in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth and uniform

  11. Carefully dip each strawberry in the melted chocolate, then attach a reserved stem while the chocolate is still soft

  12. Let the chocolate set completely before serving
