Coconut Cacao Cashew Energy Balls

Ingredients

  • 9 medjool dates, pitted
  • 1/2 cup cashews
  • 1/3 desiccated coconut
  • 1-2 tbsp coconut oil, melted
  • 1 tbsp chia seeds
  • 1 tbsp cacao powder

Decoration

  • 1/4 cup desiccated coconut

Preparation

  1. Whack all the ingredients, except for coconut oil, into a food processor and blitz for about 15 seconds until a sandy texture is achieved.

  2. Add oil in little by little and blitz until the dough sticks together when pinched.

  3. Roll out into golf-sized balls and then roll in desiccated coconut.

  4. Put in an airtight container and leave to set in the fridge for at least 3-4 hours.
