Goji Energy Bars

Ingredients

  • 350g dates
  • 200g oats
  • 100g soft dried apricots
  • 50g ground flax seed
  • 50g goji berries
  • 4 tbsp agave or rice syrup
  • 2 tsp ground ginger

Preparation

  1. Firstly whizz the oats up in a food processor until finely ground

  2. Add the dates and apricots and process until they have broken up into small pieces

  3. Finally add the flax, goji berries, syrup and ginger and process until the mixture starts to come together

  4. Press firmly into a small baking tray lined with greaseproof paper

  5. Then remove and cut into 12 bars
