Homemade Sour Gummy Worms with Real Fruit

Ingredients

  • 170-180g fresh fruit (about 1 cup blended)
  • 14g gelatin powder
  • 3 tbsp lemon juice
  • 3 tbsp honey or agave

Coating

  • 1/4 cup sugar
  • 1 tbsp citric acid

Preparation

  1. Add fruit to blender and blend until smooth.

  2. Sprinkle gelatin over lemon juice in a bowl, then stir well and let sit for 5 minutes.

  3. Add fruit purée and honey to a small saucepan over low heat and stir. Heat the purée to about 120°F to melt the gelatin, but do not boil. If using pineapple or fruits like mango or kiwi, heat the purée to at least 176°F for about 8 minutes to deactivate enzymes.

  4. Add the gelatin mixture to the fruit puree and stir until dissolved. Let cool slightly.

  5. Pour the mixture into gummy worm molds.

  6. Leave the gummies out at room temperature overnight to set and dry.

  7. Toss the set gummies in the sugar and citric acid mixture for coating.

  1. Leaving the gummies out overnight concentrates flavor and achieves the perfect texture.
