No-Bake Berry and Pistachio Bars

Ingredients

Crust

  • 1 c dates, softened (8-9 large dates or date paste)
  • 2 c gf oat flour
  • 1 c creamy Peanut Butter
  • 4 tbsp flaxseeds
  • 1 tsp cinnamon

Filling

  • 1 2/3 c cashews, soaked overnight
  • 1/2 c maple syrup
  • 1/2 c cashew milk
  • 1/2 c frozen blackberries
  • 1/2 c frozen blueberries
  • 1 tbsp lemon juice

Toppings

  • rose petals
  • pistachios, chopped

Preparation

  1. Line a 9x9 pan with parchment paper and set aside.

  2. Combine all the ingredients for the crust in a blender and blend until smooth. Pour into the pan and press until the crust covers the entire pan. Leave in the fridge until ready to use.

  3. To make the filling, combine all the ingredients in a blender and blend until smooth. Pour into the pan and place in the freezer for 1 hour to set.

  4. When ready to cut, remove from the freezer and let it sit on the counter for 5 minutes to make slicing easier. Slice into 16 pieces, add toppings, and enjoy.
