Raw Caramel Slice with Chocolate Topping

Ingredients

Base

  • 3/4 c oats
  • 3/4 c macadamia
  • 3/4 c sultanas
  • 1 tbs + 1 tsp coconut oil, melted
  • 3/4 tsp vanilla
  • 1 1/2 tbs date syrup OR maple syrup
  • Pinch of salt

Caramel

  • 1 c raw cashews, soaked in water for an hour and then rinsed
  • 1 c dates
  • 1 1/2 tbs tahini
  • 1/2 c date syrup OR maple syrup
  • 1/4 c water
  • A good pinch of salt

Top chocolate layer

  • 1/2 c coconut oil, melted
  • 1/2 c date syrup OR maple syrup
  • 1/2 c cacao powder

Preparation

  1. Place all the base ingredients into a food processor and blend until well combined and slightly sticky.

  2. Press the mixture into a lined tray. Place it in the freezer to set.

  3. Place all the caramel ingredients into a food processor and blend until smooth.

  4. Pour the caramel mixture on top of the base and return it to the freezer to set.

  5. Add all the chocolate ingredients in a small mixing bowl and mix until it’s combined and resembles chocolate sauce.

  6. Spread the chocolate sauce on top of the caramel filling. Make sure the caramel is set before you do this.

  7. Pop the tray back into the freezer for an hour and then remove it from the tray, slice it up. Enjoy!

  8. Store the raw caramel slice in the fridge.
