Vegan Peanut Butter Protein Fudge

Ingredients

  • 1 cup all-natural peanut butter
  • 1/3 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup vanilla protein powder
  • 1/2 cup vegan dark chocolate chips

Preparation

  1. Grab a large bowl and add the peanut butter, melted coconut oil, and maple syrup. Stir until a smooth mixture forms. If the peanut butter is not runny, microwave it first. Add the protein powder and stir until combined.

  2. Line a loaf pan with parchment paper and lightly spray with non-stick cooking spray. Pour the mixture into the pan, spread it evenly with a spoon, and sprinkle the dark chocolate chips on top. Place the pan in the refrigerator to set for 4-6 hours or until hardened.

  3. Remove the fudge from the refrigerator, lift it out of the pan using the parchment paper, and slice it into squares or bars. Store in an airtight container in the refrigerator until ready to eat.
