Perfectly Healthy Bounty Bars

Ingredients

  • 2 cups shredded coconut
  • 1/3 cup full-fat coconut milk
  • 1/3 cup melted coconut oil
  • 2 tbsp maple syrup (optional)
  • 2 tbsp purple sweet potato
  • 1 cup melted dark chocolate (70% or more)

Preparation

  1. Prep a loaf pan with parchment paper.

  2. Place all ingredients except the chocolate in a large mixing bowl.

  3. Stir until combined.

  4. Pour the mixture into the lined loaf pan and press to form an even layer.

  5. Freeze for about 30 minutes to set.

  6. Slice into small rectangular pieces, about the size of your thumb.

  7. Melt the dark chocolate in a water bath.

  8. Line a cookie sheet with parchment paper.

  9. Use a fork to dip the coconut bars in melted chocolate, ensuring complete coating.

  10. Place the coated bars on the lined cookie sheet.

  11. Refrigerate to set.
