Easy Chicken Pasta Bake

Ingredients

  • 5 cups pasta (I used @aldiusa gluten free brown rice pasta)
  • 2 chicken breasts
  • 1 white onion
  • 1/2 cup spinach
  • 2 1/2 cups pasta sauce of choice
  • 1/2 cup mozzarella cheese
  • 1/2 cup mushrooms
  • 1 tsp Italian seasoning
  • 2 tsp garlic powder
  • Sprinkle of salt
  • Olive oil (as needed)

Preparation

  1. Cut the chicken breasts into small strips. Then dice the onion and mushrooms.

  2. Heat a large skillet over medium heat then add a little olive oil then the chicken plus 1 teaspoon garlic powder, Italian seasoning, and salt. Sauté for 5 minutes.

  3. Add the onion and mushrooms plus another teaspoon of garlic powder. Cook for about 5-10 more minutes. Then add spinach.

  4. Cook pasta according to package instructions minus 1 minute. Then strain and set aside.

  5. Add sauce to the pan. Let it simmer about 5 minutes over low heat.

  6. Mix in the pasta.

  7. If your pan isn’t large enough, add everything to an oven safe casserole dish instead.

  8. Sprinkle the cheese on top.

  9. Bake at 400°F for about 5 minutes until the cheese browns on top. You can broil to get it extra crispy.

Tips

  1. You can add extra cheese in the middle for more cheesiness.

  2. This recipe makes about 6-7 servings.
