Easy Chicken Pasta Bake
Ingredients
- 5 cups pasta
- 2 chicken breasts
- 1 white onion
- 1/2 cup spinach
- 2 1/2 cups pasta sauce of choice
- 1/2 cup mozzarella cheese
- 1/2 cup mushrooms
- 1 tsp Italian seasoning
- 2 tsp garlic powder
- Sprinkle of salt
Preparation
Cut the chicken breasts into small strips and dice the onion and mushrooms.
Heat a large skillet over medium heat, add a little olive oil, then add the chicken, 1 teaspoon garlic powder, Italian seasoning, and salt. Sauté for 5 minutes.
Add the onion and mushrooms plus another teaspoon of garlic powder. Cook for 5-10 more minutes, then add the spinach.
Cook pasta according to package instructions, reducing time by 1 minute. Then strain and set aside.
Add sauce to the pan and let it simmer for about 5 minutes over low heat.
Mix in the pasta.
If the pan isn’t large enough, transfer everything to an oven-safe casserole dish.
Sprinkle the cheese on top.
Bake at 400°F for about 5 minutes until the cheese browns. You can broil to make it extra crispy.
Tips
You can add extra cheese in the middle for more cheesiness.
This recipe makes about 6-7 servings.
