Chicken Sweet and Sour Stir-Fry

Ingredients

  • Oil
  • Chicken (some or leftover)
  • Stir fry vegetables (pre-packaged or chopped fresh)
  • Garlic
  • Ginger
  • Chinese five spice
  • Noodles (rice or choice)
  • Spinach or chard (several handfuls)
  • Optional: chilli
  • Optional: lime juice

Sweet and sour sauce

  • Brown sugar (1 tablespoon)
  • Malt vinegar (1 tablespoon)
  • Ketchup (3 tablespoons)
  • Soy sauce (1 tablespoon)

Preparation

  1. Heat oil in a wok and add chicken, cook it, then add stir fry vegetables.

  2. Add garlic, ginger, and Chinese five spice.

  3. Make the sweet and sour sauce using 1 tablespoon brown sugar, 1 tablespoon malt vinegar, 3 tablespoons ketchup, and 1 tablespoon soy sauce.

  4. Add the noodles.

  5. Finish by adding several large handfuls of spinach or chard, and optionally chilli and lime juice to serve.
