Chipotle Chicken Avocado Melt
Ingredients
- 6 slices of bread
- 2 cups shredded rotisserie chicken
- 1 avocado
- 1/2 cup spinach
- 3 slices gouda
Chipotle sauce
- 1/4 cup mayo
- 1/4 cup chipotle peppers in adobo sauce
- 1/2 tsp garlic powder
- 1/2 tsp salt
Preparation
Chop the chipotle peppers.
In a small bowl, mix together the mayo, chipotle peppers, salt, and garlic.
Add sauce to one piece of bread then layer it with chicken, cheese, avocado, and spinach.
Make into a sandwich and repeat for the other 2 sandwiches.
Bake at 350F for 15-18 minutes until the cheese is melted and the bread is nice and toasty.
