Easy Chicken and Vegetable Traybake

Ingredients

  • Chicken thighs
  • Cauliflower
  • Carrots
  • Potatoes
  • Garlic
  • Herbs
  • Olive oil
  • 100 ml water
  • 1 tablespoon cornflour

Preparation

  1. Chop the vegetables into chunky pieces and place them on a baking tray

  2. Chop the potatoes, par-boil them for 10 minutes, then add to the tray

  3. Place chicken thighs on top with herbs and crushed garlic

  4. Drizzle with olive oil and bake at 190°C fan or 200°C for 40 minutes

  5. Drain off the juices into a pan, add a mixture of 100 ml water and 1 tablespoon cornflour to make gravy

  6. Heat through and serve
