Mom's Garlic Vegetable Soup

Ingredients

  • About 4 large grated carrots
  • About 6 small potatoes
  • About 5 cloves of garlic, crushed or grated
  • About 2 liters of water
  • 1-2 tablespoons of vegetable salt or bouillon cubes
  • 1 tablespoon of olive oil
  • Pepper to taste

Preparation

  1. Cook the carrots in olive oil for a minute or so.

  2. Add the remaining ingredients and cook until everything is cooked, about 20 minutes.

Tips

  1. Optionally top with grated cheese to enhance the garlic flavor.
