Mom's Garlic Vegetable Soup
Ingredients
- About 4 large grated carrots
- About 6 small potatoes
- About 5 cloves of garlic, crushed or grated
- About 2 liters of water
- 1-2 tablespoons of vegetable salt or bouillon cubes
- 1 tablespoon of olive oil
- Pepper to taste
Preparation
Cook the carrots in olive oil for a minute or so.
Add the remaining ingredients and cook until everything is cooked, about 20 minutes.
Tips
Optionally top with grated cheese to enhance the garlic flavor.
