Easy One-Pot Chicken Pasta

Ingredients

  • 3 tablespoons corn oil
  • 2 green onions, chopped
  • 3 cloves garlic, minced
  • 2 chicken breast fillets, cut into small cubes
  • 1 medium red bell pepper, finely chopped
  • 1 medium green bell pepper, finely chopped
  • 1 medium yellow bell pepper, finely chopped
  • 4 large tomatoes, peeled and finely chopped
  • 2 chili peppers, finely chopped
  • 1 large carrot, grated
  • 1 cup mushrooms, chopped
  • 2 tablespoons tomato paste
  • 1/2 cup green basil, chopped
  • 2 rosemary sprigs
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon crushed chili
  • 1/2 teaspoon black pepper
  • 2 teaspoons salt
  • 1 teaspoon oregano
  • 1 packet finger pasta
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons parsley

Preparation

  1. In a large pot, heat the oil, add the onion and garlic and stir until wilted.

  2. Add the chicken and sprinkle the spices on medium heat for about 6 minutes.

  3. Add the peppers of all types and stir with the chicken.

  4. Add the spices, tomatoes, carrot, mushrooms, tomato paste, basil or rosemary.

  5. Add 4 cups of water, stir the ingredients together then let it come to a boil.

  6. Add the pasta, cover the pot and leave it on medium heat for about 10 minutes, checking the pasta doneness from time to time and adding more water until it's done.

  7. Sprinkle the cheese then the parsley on the pasta and serve hot.
