Gluten Free Baked Chicken Parmesan

Ingredients

  • 3 chicken breasts
  • 2 eggs
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup Parmesan cheese
  • 1/2 tsp garlic
  • Sprinkle of salt and pepper
  • Marinara sauce
  • Mozzarella cheese

Preparation

  1. Cut chicken breasts in half and pound to even them out.

  2. In two bowls big enough to fit the chicken breast, whisk the eggs in one and in the other mix the flours, Parmesan, and spices.

  3. Dip the chicken in the egg then flour mixture.

  4. Repeat for each chicken breast.

  5. Preheat oven to 400F.

  6. Grease your pan, add the chicken breasts to it.

  7. Bake for 12 minutes, flip, bake for 12 more.

  8. Check the internal temp to make sure it’s done.

  9. Then add marinara and sprinkle cheese to each chicken breast, broil for 2-3 minutes.
