Paleo Gluten-Free Buffalo Chicken Meatballs

Ingredients

  • 1 lb ground chicken
  • 1/3 cup almond flour
  • 1/4 cup hot sauce
  • 1/2 cup shredded carrot
  • 1 tbsp coconut flour
  • 1 tbsp nutritional yeast
  • 1/2 diced onion
  • 1 tsp garlic
  • 1 tsp parsley
  • 1 tsp paprika
  • Sprinkle of salt

Preparation

  1. Preheat oven to 400°F.

  2. Shred the carrot and pat dry to reduce moisture.

  3. Dice the onion.

  4. Add to a bowl along with all of the other ingredients.

  5. Mix together.

  6. Grease a large cast iron skillet or any baking dish.

  7. Take a cookie scoop and scoop out some of the mixture.

  8. Form a ball and add to the skillet.

  9. Repeat until all the meat is used.

  10. Bake at 400°F for 23-25 minutes until internal temperature reaches 165°F.

  11. Broil at the end for 2 minutes.

  12. Let cool a little before removing.

Tips

  1. Add more hot sauce if you want. Serve with whatever dips you want like ranch.
