Paleo Gluten-Free Buffalo Chicken Meatballs
Ingredients
- 1 lb ground chicken
- 1/3 cup almond flour
- 1/4 cup hot sauce
- 1/2 cup shredded carrot
- 1 tbsp coconut flour
- 1 tbsp nutritional yeast
- 1/2 diced onion
- 1 tsp garlic
- 1 tsp parsley
- 1 tsp paprika
- Sprinkle of salt
Preparation
Preheat oven to 400°F.
Shred the carrot and pat dry to reduce moisture.
Dice the onion.
Add to a bowl along with all of the other ingredients.
Mix together.
Grease a large cast iron skillet or any baking dish.
Take a cookie scoop and scoop out some of the mixture.
Form a ball and add to the skillet.
Repeat until all the meat is used.
Bake at 400°F for 23-25 minutes until internal temperature reaches 165°F.
Broil at the end for 2 minutes.
Let cool a little before removing.
Tips
Add more hot sauce if you want. Serve with whatever dips you want like ranch.
