Indian-Style Chicken Curry Without Coconut Milk
Ingredients
- Half a chicken, cut into pieces
- 5 tablespoons chicken curry powder
- 2 tablespoons chili powder
- 1 tablespoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon fennel powder
- 6 shallots, ground
- 3 cloves garlic, ground
- 1 inch ginger, ground
- 1 tomato, diced
- 2 potatoes, halved
- 1 onion
- 2 cups water
- Salt to taste
- Coriander leaves
Preparation
Sauté one sliced onion until golden brown, then add the ground shallots, garlic, and ginger. Add the tomato and sauté until it is almost wilted.
Add the chicken and stir together until it is half cooked. Add the chicken curry powder, chili powder, turmeric powder, coriander powder, and fennel powder, then stir until well combined.
Add two cups of water and the halved potatoes, season with salt to taste, and cook until the potatoes and chicken are done, then turn off the heat.
Sprinkle with coriander leaves.
