Raspberry Mint Nice Cream

Ingredients

  • 1 cup raspberries
  • 2 large bananas, sliced and frozen
  • 3/4 cup coconut milk
  • 6 fresh mint leaves

Chocolate dip

  • 1/2 cup non-dairy chocolate
  • 1/2 tbsp coconut oil

Preparation

  1. In a blender, add all ingredients and blend until smooth, scraping down sides as you go.

  2. This can be enjoyed as a soft serve immediately or frozen for 1 hour to firm up more.

Chocolate dipped cones

  1. Melt 1/2 cup non-dairy chocolate and 1/2 tablespoon coconut oil in a small bowl.

  2. Dip cones into the melted chocolate and let set in the freezer for 5 minutes.
