Black Beans and Chorizo Seitan

Ingredients

  • black beans and chorizo seitan
  • 1 can diced tomatoes
  • 1/2 red onion, diced
  • 3 cloves garlic, minced
  • 2 tsp garlic chili sauce
  • 1 tbsp soy sauce
  • 2 tsp smoked paprika
  • 2 tsp cumin
  • 1 bell pepper, diced
  • 1 tbsp maple syrup
  • 1 cup water
  • Juice of 1/2 a lime + lime zest
  • Fresh cilantro (optional)
  • Salt and pepper to taste

Preparation

  1. In a pan, add onion and sauté until softened

  2. Add garlic, seitan and black beans

  3. Sauté until fragrant then add chili sauce, soy sauce, smoked paprika, cumin, diced tomatoes and bell pepper

  4. Sauté for about 3-4 minutes then add in water and maple syrup

  5. Bring to a simmer and cook for 25-30 minutes

  6. Turn heat off and add lime juice and zest, cilantro and salt/pepper
