Bread Pudding with Dried Fruits
Ingredients
- 4 pieces of baguette or hamam bread
Egg mixture
- 8 large eggs
- 3 cups milk
- 1 cup liquid cream
- 1 cup sugar
- 1/2 cup light brown sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon ground cardamom
- 1 tablespoon vanilla extract
- 6 tablespoons melted butter
Fruit and nut mixture
- 1 cup chopped dried apricots
- 1 cup chopped dried figs
- 1 cup chopped dates
- 1/4 cup raisins
- 1/4 cup sliced almonds
- 1/4 cup chopped walnuts
- 1/4 cup chopped roasted hazelnuts
- 1/2 cup coconut
For serving
- 1 cup date syrup
Preparation
Preheat the oven to 180°C and prepare a high-edged baking dish or individual suitable dishes.
Using a sharp knife, cut the bread into medium-sized cubes and place it in the dish.
In a blender pitcher, place the eggs, milk, cream, sugar, brown sugar, cinnamon, cardamom, vanilla, and butter, then blend until the ingredients are mixed.
In a bowl, place the apricots, figs, raisins, almonds, walnuts, hazelnuts, and coconut, mix well, and spread the mixture over the bread in the dish.
Pour the egg mixture over the fruit and nut mixture in the dish.
Place the dish in the oven for 20 minutes or until the mixture sets.
Remove the pudding from the oven, drizzle with date syrup, and serve hot or warm.
