Chickpea Soup with Tahini
Ingredients
- 1 cup yogurt
- 1/4 cup tahini
- 1 large egg
- 1 tablespoon starch
- 5 cups broth
- 1 cup cooked chickpeas
- 1 clove crushed garlic
For serving
- olive oil
- fried pine nuts
Preparation
In a deep pot, place the yogurt, tahini, egg, and starch. Using a hand whisk, mix the ingredients until they are well combined.
Place the pot on medium heat. Using a wooden spoon, stir the mixture until it starts to boil. Add the broth while continuing to stir until the broth starts to boil and the ingredients are well combined.
Add the chickpeas and garlic. Let the soup cook for 10 minutes while continuing to stir to prevent the yogurt from separating.
In a deep serving bowl, pour the soup. Sprinkle the fried pine nuts on top and serve.
