Chickpea Fatteh with Yogurt and Bread
Ingredients
- 4 loaves of bread, cut into cubes and toasted
- 4 cups cooked chickpeas
- 6 cups yogurt or labneh
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1 teaspoon salt
- 4 cloves crushed garlic
For serving
- Fried pine nuts
- Chopped parsley
- Paprika
Preparation
Bring a deep serving dish.
Place the bread in the serving dish.
In a medium-sized pot, place the chickpeas with their cooking water and heat over medium heat.
In a deep bowl, place the yogurt, tahini, lemon juice, salt, and garlic. Using a wide plastic spoon or a hand whisk, stir the ingredients until a smooth sauce forms.
Using a deep ladle, spread a little of the chickpea cooking water over the bread in the serving dish. Spread a little of the chickpeas over the bread. Spread the yogurt mixture over the bread and chickpeas to cover completely.
Garnish the chickpea fatteh with more whole chickpeas. Spread the fried pine nuts over the chickpea fatteh and sprinkle with parsley and paprika.
Serve the chickpea fatteh immediately to enjoy the crunchy bread and warm chickpeas.
Tips
You can add more flavor by garnishing with a little pomegranate seeds.
