Homemade Turkish Meat Pide

Ingredients

Dough

  • 3 cups flour
  • 1/2 cup warm milk
  • Slightly more than 1/2 cup water
  • 1 teaspoon salt
  • 1 teaspoon instant yeast

Filling

  • 200g beef cubes
  • 1 onion
  • 1 green pepper
  • 1/2 bell pepper
  • 1 teaspoon tomato paste
  • 2 tomatoes
  • Salt
  • Black pepper
  • Red pepper powder
  • 1 heaping tablespoon butter
  • Olive oil

Additional

  • Grated kashar cheese
  • 1 egg yolk for brushing

Preparation

  1. Knead the dough until slightly sticky, cover and let it rise while preparing the filling.

  2. Melt butter and olive oil in a pressure cooker, add beef and cook until the color changes, then close the lid and cook on low heat for 15 minutes after the whistle sounds.

  3. After cooking, shred the meat, add onion and sauté in the remaining oil and water, then add green pepper and bell pepper and continue sautéing.

  4. Stir in tomato paste, tomatoes, salt, black pepper, and red pepper powder, and cook until done.

  5. Divide the dough into 4 parts, roll out each part lengthwise on a floured surface, fold the edges to form a border, add the filling and spread it evenly, then sprinkle grated kashar cheese on top.

  6. Brush the edges with egg yolk and bake in a preheated oven at 200°C using top and bottom heat until golden brown.

Notes

  1. Adjust the pressure cooking time based on your specific pressure cooker.
