Quick Salmon Avocado Sweet Potato Lunch
Ingredients
- 1 piece of salmon
- quinoa
- 1/2 avocado
- 1 sweet potato
- tomatoes with feta
Preparation
Cook salmon for 3 minutes on each side with seasoning.
Bake sweet potato at 400F for 45 minutes, then turn off oven and let it caramelize for another 45 minutes.
Assemble the meal with quinoa, avocado, and tomatoes with feta.
