Quick Salmon Vegetable Bowl Lunch

Ingredients

  • 1 piece of salmon
  • new bae seasoning
  • avocado oil
  • tomatoes
  • Brussels sprouts
  • zucchini
  • 1/2 avocado
  • red pepper flakes
  • mushrooms
  • quinoa

Preparation

  1. Cook salmon in a cast iron skillet with avocado oil and new bae seasoning for 3 minutes on each side.

  2. Roast Brussels sprouts at 400°F for 45 minutes.

  3. Sauté zucchini until tender.

  4. Sauté mushrooms until cooked.

  5. Assemble the bowl with salmon, tomatoes, roasted Brussels sprouts, sautéed zucchini, avocado with red pepper flakes, sautéed mushrooms, and quinoa.
