Soft Boiled Egg with Roasted Vegetables
Ingredients
- 1 egg
- Red pepper flakes (to taste)
- Carrots
- Tomatoes
- 1/2 avocado
- Brussels sprouts
- Quinoa
Preparation
Soft boil the egg for 6-7 minutes until desired doneness, then season with red pepper flakes
Preheat oven to 400°F and roast carrots for 40 minutes with chili lime seasoning.
Roast Brussels sprouts at 400°F for 20-25 minutes until tender
Prepare quinoa according to package instructions if not pre-cooked
Assemble the dish by combining with fresh tomatoes and avocado.
