Soft Boiled Egg with Roasted Vegetables

Ingredients

  • 1 egg
  • Red pepper flakes (to taste)
  • Carrots
  • Tomatoes
  • 1/2 avocado
  • Brussels sprouts
  • Quinoa

Preparation

  1. Soft boil the egg for 6-7 minutes until desired doneness, then season with red pepper flakes

  2. Preheat oven to 400°F and roast carrots for 40 minutes with chili lime seasoning.

  3. Roast Brussels sprouts at 400°F for 20-25 minutes until tender

  4. Prepare quinoa according to package instructions if not pre-cooked

  5. Assemble the dish by combining with fresh tomatoes and avocado.
