Soft Boiled Egg Veggie Packed Lunch Idea

Ingredients

  • 1 egg
  • tomatoes
  • 1/2 avocado
  • Trader Joe’s everything but the bagel seasoning
  • Brussels sprouts
  • sweet potatoes

Preparation

  1. Boil egg for 7 minutes to soft boil.

  2. Roast Brussels sprouts at 409°F for 40 minutes.

  3. Bake sweet potato fries at 400°F for 29 minutes on each side.

  4. Assemble lunch with tomatoes, avocado, and seasoning.
