Quick Roasted Vegetable Bowl Dinner

Ingredients

  • Chickpeas
  • 1/2 avocado
  • Sweet potatoes
  • Tomatoes
  • Zucchini
  • Brussels sprouts
  • Chili lime seasoning

Preparation

  1. Preheat oven to 415°F

  2. Toss chickpeas with chili lime seasoning and roast at 415°F for 15 minutes.

  3. Cut sweet potatoes into fries and roast at 415°F for 20 minutes on each side.

  4. Trim Brussels sprouts and roast at 400°F for 40 minutes.

  5. Sauté zucchini in a pan until tender

  6. Slice avocado and tomatoes

  7. Assemble all ingredients in a bowl
