Quick Roasted Vegetable Bowl Dinner
Ingredients
- Chickpeas
- 1/2 avocado
- Sweet potatoes
- Tomatoes
- Zucchini
- Brussels sprouts
- Chili lime seasoning
Preparation
Preheat oven to 415°F
Toss chickpeas with chili lime seasoning and roast at 415°F for 15 minutes.
Cut sweet potatoes into fries and roast at 415°F for 20 minutes on each side.
Trim Brussels sprouts and roast at 400°F for 40 minutes.
Sauté zucchini in a pan until tender
Slice avocado and tomatoes
Assemble all ingredients in a bowl
