Easy Packed Lunch Breakfast with Veggies

Ingredients

  • 2 eggs
  • 1/2 avocado
  • Red pepper flakes
  • Red potatoes
  • Steak and potatoes seasoning
  • Avocado oil
  • Brussels sprouts
  • Tomatoes

Preparation

  1. Boil eggs for 7 minutes to achieve a soft boil.

  2. Preheat oven to 400°F.

  3. Toss red potatoes with steak and potatoes seasoning and avocado oil.

  4. Roast the seasoned potatoes in the oven for 30 minutes.

  5. Roast Brussels sprouts and tomatoes in the oven for 30 minutes at 400°F.

  6. Halve the avocado and sprinkle with red pepper flakes.

  7. Assemble all components into a packed lunch combo for easy eating.
