Simple Breakfast with Roasted Delicata Squash and Eggs

Ingredients

  • 2 eggs
  • avocado oil
  • red pepper flakes
  • delicata squash
  • cinnamon
  • 1/2 avocado

Preparation

  1. Slice delicata squash in half and remove seeds.

  2. Cut squash into thin half moons and sprinkle with cinnamon.

  3. Bake squash at 400F for 35 minutes.

  4. Mash 1/2 avocado.

  5. Heat a pan for a few minutes to make it hot.

  6. Fry 2 eggs in avocado oil with red pepper flakes for crispiness.

  7. Optionally, broil or microwave the squash if reheating.

  8. Assemble by combining roasted squash, mashed avocado, and fried eggs.
