Simple Breakfast with Roasted Delicata Squash and Eggs
Ingredients
- 2 eggs
- avocado oil
- red pepper flakes
- delicata squash
- cinnamon
- 1/2 avocado
Preparation
Slice delicata squash in half and remove seeds.
Cut squash into thin half moons and sprinkle with cinnamon.
Bake squash at 400F for 35 minutes.
Mash 1/2 avocado.
Heat a pan for a few minutes to make it hot.
Fry 2 eggs in avocado oil with red pepper flakes for crispiness.
Optionally, broil or microwave the squash if reheating.
Assemble by combining roasted squash, mashed avocado, and fried eggs.
