Paleo Breakfast Tacos with Eggs and Avocado
Ingredients
- 2 eggs
- avocado oil
- paprika
- 1/2 avocado
- mushrooms
- 2 paleo tortillas
- sriracha
Preparation
Fry 2 eggs over low to medium heat in avocado oil and sprinkle with paprika.
Sauté mushrooms until cooked.
Cook 2 paleo tortillas in a skillet with avocado oil until crispy.
Assemble the tacos by topping the crispy tortillas with fried eggs, sautéed mushrooms, and 1/2 avocado, then add sriracha for extra spice.
