Paleo Breakfast Tacos with Eggs and Avocado

Ingredients

  • 2 eggs
  • avocado oil
  • paprika
  • 1/2 avocado
  • mushrooms
  • 2 paleo tortillas
  • sriracha

Preparation

  1. Fry 2 eggs over low to medium heat in avocado oil and sprinkle with paprika.

  2. Sauté mushrooms until cooked.

  3. Cook 2 paleo tortillas in a skillet with avocado oil until crispy.

  4. Assemble the tacos by topping the crispy tortillas with fried eggs, sautéed mushrooms, and 1/2 avocado, then add sriracha for extra spice.
