Savory Breakfast with Eggs and Zucchini Noodles
Ingredients
- 2 slices bacon
- 1 zucchini, spiralized
- Eggs
- Chipotle seasoning
- 1/2 avocado
Preparation
Spiralize zucchini and store uncooked in the fridge overnight.
Sauté zoodles in a skillet over medium heat for a few minutes.
Form zoodles into little nests in the skillet.
Crack eggs into the nests and cook until done, flipping if necessary to ensure whites and yolk are cooked.
Sprinkle with chipotle seasoning.
Reheat bacon in the skillet to keep it crispy.
Serve with sliced avocado.
