Turkey Burger and Vegetable Lunch Bowl

Ingredients

  • 2 turkey burgers
  • quinoa
  • Brussels sprouts
  • zucchini
  • onion
  • tomatoes
  • 1/2 avocado
  • avocado oil

Preparation

  1. Preheat oven to 400°F

  2. Roast Brussels sprouts at 400°F for 45 minutes.

  3. In a cast iron skillet, sauté zucchini and onion with avocado oil until crispy, and heat turkey burgers.

  4. Assemble all ingredients together, adding fresh tomatoes and avocado.
