Paleo Chicken Veggie Bowl with Sweet Potatoes
Ingredients
- 1 piece of leftover chicken
- cucumber
- feta cheese
- zucchini
- crinkle cut sweet potatoes
- 1/2 avocado
- tomatoes
- avocado oil
Preparation
Reheat the leftover chicken in the oven until thawed.
Roast the crinkle cut sweet potatoes at 400°F for 40 minutes from frozen, then broil to make crispy.
Sauté the zucchini in a skillet with avocado oil.
Assemble the bowl with chicken, cucumber, feta, roasted zucchini, sweet potatoes, avocado, and tomatoes.
