Paleo Chicken Veggie Bowl with Sweet Potatoes

Ingredients

  • 1 piece of leftover chicken
  • cucumber
  • feta cheese
  • zucchini
  • crinkle cut sweet potatoes
  • 1/2 avocado
  • tomatoes
  • avocado oil

Preparation

  1. Reheat the leftover chicken in the oven until thawed.

  2. Roast the crinkle cut sweet potatoes at 400°F for 40 minutes from frozen, then broil to make crispy.

  3. Sauté the zucchini in a skillet with avocado oil.

  4. Assemble the bowl with chicken, cucumber, feta, roasted zucchini, sweet potatoes, avocado, and tomatoes.
