Spicy Sriracha Salmon with Vegetables

Ingredients

  • 1 tsp avocado oil
  • 1/2 tsp garlic powder
  • 1/4 tsp mild chili powder
  • 1/2 tsp sriracha
  • sprinkle of salt
  • salmon fillet
  • mushrooms
  • sweet potatoes
  • zucchini
  • avocado
  • tomatoes

Preparation

  1. In a small bowl, mix together 1 tsp avocado oil, 1/2 tsp garlic powder, 1/4 tsp mild chili powder, 1/2 tsp sriracha, and a sprinkle of salt.

  2. Use a knife to spread the mixture onto the salmon.

  3. Cook the salmon over medium heat in avocado oil for 3 minutes on each side.

  4. Sauté mushrooms until tender.

  5. If not using leftovers, bake sweet potatoes at 400F for 30 minutes.

  6. Sauté zucchini until tender.

  7. Mash the avocado.

  8. Serve with tomatoes.
