Taco Stuffed Sweet Potatoes with Beef and Veggies
Ingredients
- 2 sweet potatoes
- Ground beef
- 1/4 of Primal Palate taco seasoning
- Fajita vegetables
- 1 tablespoon avocado oil
- Avocado
Preparation
Bake sweet potatoes at 400°F for 50 minutes.
Cook ground beef in a skillet over medium heat for 10 minutes with 1/4 of the taco seasoning.
Bake fajita vegetables at 400°F for 15 minutes with the same seasoning and 1 tablespoon avocado oil.
Mash avocado and top the stuffed sweet potatoes.
