BBQ Chicken Stuffed Sweet Potatoes

Ingredients

  • Sweet potatoes
  • 2 organic chicken breasts
  • 1/2 cup BBQ sauce
  • Avocado oil
  • Onions
  • Cilantro
  • Jalapeños

Preparation

  1. Preheat oven to 400F.

  2. Poke holes in the sweet potatoes and bake for 45 minutes.

  3. Cook chicken breasts in a skillet with a little avocado oil over medium heat for 6 minutes on each side.

  4. Shred the chicken using two forks.

  5. Add 1/2 cup of BBQ sauce to the shredded chicken and mix well; use more or less depending on preference.

  6. Mix in onions, cilantro, and jalapeños.

  7. Stuff the BBQ chicken mixture into the baked sweet potatoes and serve.
