BBQ Chicken Stuffed Sweet Potatoes
Ingredients
- Sweet potatoes
- 2 organic chicken breasts
- 1/2 cup BBQ sauce
- Avocado oil
- Onions
- Cilantro
- Jalapeños
Preparation
Preheat oven to 400F.
Poke holes in the sweet potatoes and bake for 45 minutes.
Cook chicken breasts in a skillet with a little avocado oil over medium heat for 6 minutes on each side.
Shred the chicken using two forks.
Add 1/2 cup of BBQ sauce to the shredded chicken and mix well; use more or less depending on preference.
Mix in onions, cilantro, and jalapeños.
Stuff the BBQ chicken mixture into the baked sweet potatoes and serve.
