Sweet Potato Nachos with Poached Eggs and Veggies
Ingredients
- 2 medium-large sweet potatoes
- 1 teaspoon oil (olive or avocado)
- 2 eggs
- 1/2 avocado
- jalapeños
- onions
- tomatoes
- salsa
Preparation
This recipe makes two servings.
Preheat oven to 450F.
Slice two medium-large sweet potatoes into rounds.
Coat the sweet potato slices with 1 teaspoon of oil (olive or avocado).
Bake in the oven for 20-25 minutes depending on thickness.
Poach 2 eggs using an egg poacher pan or preferred method.
Top the baked sweet potatoes with poached eggs, 1/2 avocado, jalapeños, onions, tomatoes, and salsa.
