Sweet Potato Nachos with Poached Eggs and Veggies

Ingredients

  • 2 medium-large sweet potatoes
  • 1 teaspoon oil (olive or avocado)
  • 2 eggs
  • 1/2 avocado
  • jalapeños
  • onions
  • tomatoes
  • salsa

Preparation

  1. This recipe makes two servings.

  2. Preheat oven to 450F.

  3. Slice two medium-large sweet potatoes into rounds.

  4. Coat the sweet potato slices with 1 teaspoon of oil (olive or avocado).

  5. Bake in the oven for 20-25 minutes depending on thickness.

  6. Poach 2 eggs using an egg poacher pan or preferred method.

  7. Top the baked sweet potatoes with poached eggs, 1/2 avocado, jalapeños, onions, tomatoes, and salsa.
