Buttery Shrimp with Sweet Potato Fries and Avocado
Ingredients
- Frozen shrimp
- Ghee
- Half an avocado
- 1-2 sweet potatoes
- 1 teaspoon avocado oil
- Lemon or lime juice
- Pink Himalayan salt
Preparation
Thaw frozen shrimp in a skillet.
Reheat shrimp with a tiny bit of ghee in the skillet.
Cut sweet potatoes into desired shapes, such as fries, for variety.
Toss sweet potato pieces with 1 teaspoon avocado oil.
Bake at 400°F for 20 minutes on each side.
Sprinkle with pink Himalayan salt after baking.
To keep avocado fresh, apply lemon or lime juice and store in a container or aluminum foil.
