Buttery Shrimp with Sweet Potato Fries and Avocado

Ingredients

  • Frozen shrimp
  • Ghee
  • Half an avocado
  • 1-2 sweet potatoes
  • 1 teaspoon avocado oil
  • Lemon or lime juice
  • Pink Himalayan salt

Preparation

  1. Thaw frozen shrimp in a skillet.

  2. Reheat shrimp with a tiny bit of ghee in the skillet.

  3. Cut sweet potatoes into desired shapes, such as fries, for variety.

  4. Toss sweet potato pieces with 1 teaspoon avocado oil.

  5. Bake at 400°F for 20 minutes on each side.

  6. Sprinkle with pink Himalayan salt after baking.

  7. To keep avocado fresh, apply lemon or lime juice and store in a container or aluminum foil.
