Eggs in a Basket with Zucchini Noodles

Ingredients

  • 2 organic brown eggs
  • 1 zucchini
  • avocado oil
  • fresh local sourdough bread
  • 1/2 avocado
  • tomatoes
  • African smoke seasoning

Preparation

  1. Spiralize the zucchini using a mixer attachment.

  2. Sauté the zoodles in avocado oil for about 4 minutes.

  3. Form little egg nests in the zoodles.

  4. Crack the eggs into the nests.

  5. Cook until crispy.

  6. Pair with fresh sourdough bread, half an avocado, and tomatoes.

  7. Top with African smoke seasoning.
