Simple Zucchini Noodle Egg Baskets
Ingredients
- 1 zucchini, spiralized
- 2 eggs
Accompaniments
- Leftover bacon, reheated
- 1/2 avocado
- Sautéed spinach with red pepper flakes
Preparation
Spiralize the zucchini into noodles.
Cook the zucchini noodles in a skillet over low to medium heat for a few minutes.
Form the cooked zucchini noodles into two basket shapes in the skillet.
Crack the eggs into the zucchini baskets.
Cook until the egg whites are done.
