Quick Taco Quinoa Skillet Dinner

Ingredients

  • 1 lb ground turkey (or beef, chicken, veg option)
  • 1 14oz can diced tomatoes
  • 1 packet taco seasoning
  • 1/4 onion sliced
  • 2 bell peppers (or use a frozen mix of peppers and onion)
  • 3/4 cup quinoa
  • 1.5 cups broth
  • 1-2 cups shredded marble or cheddar cheese
  • Green onion for garnish (optional)

Preparation

  1. Add peppers and onions to a skillet over medium heat with 1 tablespoon olive oil and cook until soft, about 5 minutes. If using frozen, add to a skillet over medium heat with a splash of water and cook until soft.

  2. Push veggies to the side and add ground turkey. Cook until no longer pink, breaking it up with a spatula. If there’s excess water, drain it once the turkey is cooked.

  3. Add taco seasoning and stir everything well.

  4. Add quinoa, diced tomatoes, and broth.

  5. Stir, cover, and let simmer for 20 minutes.

  6. Top with cheese and put the lid back on until the cheese has melted.

  7. Optionally, serve with green onion, avocado, and yogurt.

Tips

  1. Use fresh or frozen vegetables as preferred.

  2. Leftovers reheat well and are delicious.

  3. Customize with toppings like avocado or Greek yogurt/sour cream, and choose any ground meat or vegetarian option.
