Easy Creamy Shrimp Orzo Dish

Ingredients

  • 1.5 cups orzo
  • 1 lb shrimp
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 cups water or broth
  • 1/2 onion, diced
  • 2 cups cherry tomatoes, halved
  • 2 garlic cloves
  • 1/2 tsp chili flakes
  • 1/3 cup goat cheese

Preparation

  1. Pat dry the shrimp, season it, and toss with oil.

  2. Heat a large skillet over medium heat; once hot, add the shrimp and cook for 2 minutes per side.

  3. Remove the shrimp from the heat.

  4. Add another splash of oil, then add the onion and cherry tomatoes.

  5. Cook for 5 minutes until the tomatoes soften.

  6. Add the garlic and chili flakes, and cook for another minute.

  7. Add the orzo and broth, lower the heat to simmer, and cook while stirring for 5-10 minutes until the liquid starts to absorb.

  8. Stir in the goat cheese and return the shrimp.

  9. Serve immediately.

Tips

  1. If not a fan of shrimp, swap it for chicken.

  2. The secret to creaminess is using goat cheese.
