Creamy One-Pot Taco Soup

Ingredients

  • 1 onion
  • 1 bell pepper
  • 2 garlic cloves
  • 2 tbsp taco seasoning
  • 1 large can diced tomatoes
  • 1 pint chicken broth (around 4 cups)
  • 1 cup frozen corn
  • 1/3 cup cream cheese
  • 2 raw chicken breasts
  • Shredded cheddar for serving
  • Green onion for serving

Preparation

  1. Add oil to a large pot on medium heat.

  2. Once hot, add onion and a sprinkle of salt.

  3. Cook for 4 minutes until onions are soft.

  4. Add garlic and taco seasoning, stir for 1 minute.

  5. Add canned tomato and broth, stir and add in 2 raw chicken breasts.

  6. Cover and simmer for 25 minutes.

  7. Remove chicken and shred; meanwhile, add peppers and corn.

  8. Add shredded chicken back in and stir in cream cheese.

  9. Cook for another 5 minutes.

  10. Serve with shredded cheddar and diced green onion.

Tips

  1. You can save 20 minutes by using rotisserie or cooked chicken instead of raw chicken breasts.
