Creamy One-Pot Taco Soup
Ingredients
- 1 onion
- 1 bell pepper
- 2 garlic cloves
- 2 tbsp taco seasoning
- 1 large can diced tomatoes
- 1 pint chicken broth (around 4 cups)
- 1 cup frozen corn
- 1/3 cup cream cheese
- 2 raw chicken breasts
- Shredded cheddar for serving
- Green onion for serving
Preparation
Add oil to a large pot on medium heat.
Once hot, add onion and a sprinkle of salt.
Cook for 4 minutes until onions are soft.
Add garlic and taco seasoning, stir for 1 minute.
Add canned tomato and broth, stir and add in 2 raw chicken breasts.
Cover and simmer for 25 minutes.
Remove chicken and shred; meanwhile, add peppers and corn.
Add shredded chicken back in and stir in cream cheese.
Cook for another 5 minutes.
Serve with shredded cheddar and diced green onion.
Tips
You can save 20 minutes by using rotisserie or cooked chicken instead of raw chicken breasts.
